Thinly slice all the vegetables and mix well in a large bowl. Pluck the mint leaves from the tough stems and add them to the vegetables.
Mix the oil, lemon juice, honey, and date syrup (or ground dates), pour over the vegetables 15 minutes before serving, and mix well.
When serving, add pink pepper and pomegranate seeds. Salt is optional here, but if you feel it’s missing that savoury touch, feel free to add it.
