Mix all the ingredients (except the cheese and seeds) in a bowl and knead until you get a soft, non-sticky dough. Divide into equal parts, roll into balls, flatten slightly, and use your finger to make a hole in the middle to shape into bagels. Brush with egg yolk and sprinkle with grated cheese and seeds.
Bake at 180°C for 25–30 minutes.
Eat as is or slice and fill with your favourite spread (despite the cheese on top, they’re great with jam too!).
