plain honey (easiest and cheapest) – 450 g (can be replaced with "Golden Sirup", but it’s hard to find)
brown sugar – 250 g (or less)
vegetable oil – 250 ml
warm water – 250 ml
baking powder – 1 tsp
baking soda – 1 tsp
gingerbread spices (a mix of ground cinnamon, cloves, orange zest, anise, fennel, nutmeg, mace, and cardamom) – 2 tsp
ground ginger – 1 tsp
eggs – 4 pcs
salt – 1 pinch

Cooking method
Warm the honey in the oven until it becomes slightly runny. In a large bowl, thoroughly mix all the ingredients except the flour. Once combined, add the flour and beat the batter until it lightens in colour.
Pour the batter into a baking tin and bake it in a preheated oven at 145°C for 90 minutes. The cake will rise in the centre during baking. Once baked, turn the cake upside down while still in the tin and allow it to cool completely (this helps it settle evenly).
If desired, you can add apples to the batter. Dice the apples and sauté them with cinnamon beforehand. (preparing apples in advance often leads to questions like, “Are those apples in the pot for eating, or are they for New Year?”)
